I am a big fan of working smarter and not harder, and this one pot shrimp boil is so easy to make and an easier cleanup. It’s “one of the best things I’ve ever made”…. according to my husband, the food critic. I love cooking and entertaining, but we have a rule in our house that I’m never allowed to make something “new” for a group until we’ve tried it once and confirmed it’s not a total bust. Fortunately, this shrimp boil was such a hit the first time, I’m requested to make it again and again… Grateful for a super honest husband, because being allergic to shrimp really throws a wrench into things when I can’t taste test along the way, but if everyone’s happy, I’m happy!
Nothing brings family and friends together better than great food, drinks, and a long table… and that’s exactly what I love about a boil. No table manners, no problem…. it’s the one time we can lick the butter off our fingers, make a mess, and not give the side eye for the ‘smacking’ ….
HOW TO PREP
I hear so many people in my circle say “ugh, I hate cooking”. I’m here to tell you… even the people who hate it can love this recipe and simply because its so easy.
FOR THE TABLE
- disposable table cloth (hello dollar store)
- newspaper
- paper plates
- rolls of paper towels
TIPS
- Prep the table earlier in the day. There’s something about a pretty table that makes the shrimp boil party feel special.
- Chop your veggies in advance and store them in the pot ready for show time.
- Put out multiple bowls for butter dipping.
ASHLEY’S ONE POT SHRIMP BOIL
Servings 6
- 3lbs of 21/25 shell on Jumbo Shrimp
- 3lbs of andouille or chorizo sausage (i’ve done both, chorizo is less spicy)- sliced into small pieces.
- Mini red/golden potatoes
- 1 red onion
- 3 lemons
- 8 halves of corn (I like to buy the frozen cobs that are already in half- makes it easier)
- 1 package of Zatarain’s Shrimp Boil Seasoning (could make from scratch, but remember I’m working “smarter”).
- Old Bay Seasoning
- Parsley
- Melted Butter
- Pre Packaged Corn Muffins if you don’t have time to make homemade.
Instructions
- Throw potatoes, corn, onion, and Zatarains seasoning into pot and bring to a boil. Boil about twenty minutes and fork the potato to see if its tender.
- Next, add sausage and shrimp. Boil about another 4 minutes until the shrimp are nice and pink and curled up.
- Drain the liquid, and dump the contents on your table making sure to keep it on the newspaper (will melt the table cloth otherwise). Garnish with parsley.
- Serve with lemon wedges, melted butter, old bay, and corn muffins.
- Roll up your sleeves, grab a bib if you’re a messy eater, add a cold drink and enjoy this time together around the table! Roll it all up when you’re done and toss !! (Pro tip: if your trash day is not near, bag up the smelly shrimp in a gallon baggy and toss in the freezer to avoid smelly trash for days).
