There’s something about creamed spinach that makes me think Christmas so thats why I serve it every year! It’s hot, gooey, filling, and I don’t know about you but dunking my steak or prime rib in it is like dunking your turkey in your mashed potatoes on Thanksgiving!
In previous years I’ve tried many different recipes inclusive of cream cheese, sour cream, and other alternatives to a cream sauce with flour. But nothing quite beats a true roux so I’m throwing keto out the window one holiday a year and indulging! This recipe is easy and on the table in 30 minutes!

Creamed Spinach Recipe
This recipe is meant to be a side and the measurements below serve 8. I used a 8×8 pan to serve in and if you’re making it in advance, allow yourself about 35 minutes at 350 to warm up as it is best served extremely hot and straight from the oven.

+ Start by melting 1/4 butter to a hot pan. Slowly whisk in the flour until you get a thick consistency (mix well).
+ Add diced onion and a little more butter until translucent (about 5 minutes)
+ Add garlic and half and half and mix well.
+ Set aside while you use a separate pan to wilt the spinach with butter batch by batch.
+ Combine the spinach to roux and mix well, adding more half and half until desired consistency.
+ Season with salt, pepper, cayenne, and nutmeg to taste!
+ Serve in an 8×8 dish and enjoy!
